On Page 8 of The Witch I have listed an optional rule of Special Restrictions on witches.
I did not list a lot of them, and by the nature of the book they are mostly mechanical but there are some ideas.
Well +Zak Smith has crowd-sourced an entire list of Witch Traits that you can use in place of or in addition too the Special Restrictions.
